The Willkommen Committee recently welcomed Fischer’s Sleepy Bison Grill as a new business and new member of the New Ulm Area Chamber of Commerce. 

Fischer’s Sleepy Bison Grill is a food truck owned by Elizabeth Fischer that serves the area with various dishes featuring bison meat raised at Sleepy Bison Acres in Sleepy Eye, which she has run with her husband Craig since 2013.  At five years old, Craig played the Oregon Trail and shot his first bison.  After that, he was hooked.  He started Sleepy Bison Acres after they were gifted a bison for a wedding present, and they kept buying more, steadily growing their farm.  They practice regenerative farming, attend farmers markets, and have a frozen retail business.  Last fall, they decided to expand to the food truck scene and bought the trailer they use now.  Thanks to their extensive support system of family and friends, they are able to travel all over Minnesota from places like Granite Falls to Prior Lake and Park Rapids and many others.
